Raw ‘Spaghetti Bolognese’

Preparation time: 20minutes
 
Ingredients: 

For ‘spaghetti’
Courgettes - (1-2 per person)
 
For sauce:
4 chopped tomatoes
1 Red bell pepper
2 cups of oil based sun dried tomatoes
1 clove of garlic
1 1/2 basil and oregano- (Fresh or dried)
Pinch of Himalayan salt
3 tablespoons of olive oil
A pinch of black and cayenne pepper - adjust according to taste

To make 'spaghetti'
Slice the courgettes using a potato peeler or use a spiralizer
 
To make the sauce: 
Put all the ingredients into a food processor and blend the vegetables until it has the consistency you require.
The sauce can be made smooth or you may prefer a crunchier texture. 
 
Place the sauce on top of the courgettes, garnish with parsley and serve immediately.
Any remaining sauce/courgettes can be placed in the fridge and used within 4-5 days.
If storing in this way, please place the courgettes and the sauce in separate containers

Sesame Balls

Preparation time about 30 minutes
These are especially good when you fancy something sweet in the afternoon - yummy and healthy!

1-cup ground sesame seeds.
1/2-cup ground sunflower seeds.
10 Dates.
1-teaspoon fresh lemon juice
1/4-teaspoon vanilla.

Grind dates in a food process and mix with remaining ingredients.
Shape the mixture into balls.
Roll in whole black sesame seeds.

This recipe should make about 12 balls. 

Raw Chocolate Flan

For the crust:
2 cups of walnuts (no need to soak)
8 Medjool dates
1 ½ cup of shredded coconut
1 pinch of Himalayan salt

For the filling:
2 Avocados
2 tablespoons Cocoa powder
2 tablespoons of dark Agave Nectar
4 Medjool dates (soaked for 30 mins)

To make the crust:
Mix the coconut and the walnuts in a food processor until coarse. Add the dates to the mixture.
Bind together until the mixture is fully blended. Pour into a tart pan. Smooth out, making sure the mixture reaches the edges

To make the filling:
Mix the avocados, cocoa powder, soaked dates and Agave Nectar together in a food processor for 30 seconds. Check the consistency is smooth, if not blend for a further 10 seconds, maximum.
Pour this mixture on top of the crust mixture
Place flan in the refrigerator for about 1 hour.
Decorate with fresh strawberries or your favourite fruit.
